The Etna experience is not complete without tasting the 'volcanic' cuisine. Refuges are not just resting points for hikers, but true temples of rustic gastronomy. Here the dishes are caloric, tasty, and perfect after a walk in the cold.
Typical Dishes to Order
Forget fish. Here we eat land and forest. The king dish is the 'Salsiccia al Ceppo' (often from Linguaglossa), seasoned with wild fennel and grilled.
The first courses are based on Etna porcini mushrooms (delicious!) or pork sauce. You must try pasta with 'pistachio and speck' or revisited macaroni alla norma. And to finish? A cannolo or a hazelnut dessert.
Rifugio Sapienza (Etna South)
More than a refuge, it is now a hotel-restaurant. It offers all comforts, heated rooms, and a large dining hall. It is perfect for those who want comfort and is located right at the start of the cable car. Very busy at lunch, better to book.
Rifugio Citelli (Etna North)
Rifugio Citelli is a true historic alpine refuge, built in lava stone. The atmosphere here is more authentic, spartan but welcoming. It is immersed in a birch forest. Stopping here for a coffee or a quick lunch is a must if you visit the North slope.
Rifugio Ariel
Hidden in the woods near the Altomontana track, it is an intimate and family-friendly place. Here you can eat perhaps the best pasta with Etna mushrooms.
It is also an excellent starting point for trekking towards the Galvarina. If you are looking for silence and home cooking, this is the right place.
Chalet Clan dei Ragazzi
To the North, immersed in the Ragabo pine forest, there is this historic chalet. It offers cheap beds and a huge all-wood dining room.
It is the base for scout groups and 'old school' hikers. The atmosphere is that of the Dolomites, with the fireplace always lit in winter.
The Ragabo Forest: Nordic Magic
On the North slope, the Ragabo pine forest offers a fairytale atmosphere. Here is the **Rifugio Ragabo**, famous for its home cooking and rustic atmosphere.
A few meters further on, **Rifugio Brunek** has just reopened (December 2025), completely renovated. It is the mandatory stop before or after going up to Piano Provenzana.
